Napoleon cake is best known for sitting in fancy dessert cases looking all sophisticated. Funfetti, meanwhile, is rarely seen outside Mom's favorite baking pan. Who knew that the two would someday come together to become simultaneously the most fancy and fun-looking pastry we've ever made.

In our funfetti napoleon cake, the traditional pastry cream is swapped for lightly sweetened mascarpone. It's just thick enough to suspend all those delightfully crunchy sprinkles so they're in every bite. The puff pastry is sugared, baked and flattened for a crispy foil to all that soft cream.
