Annemarie Ahearn, who has worked at New York's Blue Hill and as Tom Colicchio's assistant, opened this cooking school in mid-coast Maine three years ago. Classes are taught in a timber-frame house, the centerpiece of which is a gorgeous cooking hearth. As fall descends, learn how to braise meat and make savory pies or sign up for a Full Moon or Sunday Supper, which includes ingredients from Maine's bounty beyond lobster and blueberries.
