Two heavy-hitting New York chefs have recently fixed their sights on tacos, despite having no previous experience in the genre. At Salvation Taco, April Bloomfield collaborated with fellow chef Roberto Santibañez; together the two have styled-out tacos that might be stuffed with pig's ears, or fried striped bass and mayonnaise. Nearby, Josh Capon’s El Toro Blanco keeps it traditional, with stuffings that include goat and nopales.
