Herby Green Goddess Baked Chicken Recipe

Ingredients
  • 1 cup plain Greek yogurt
  • ¼ cup fresh parsley, plus more for serving
  • ¼ cup fresh chives, plus more for serving
  • ¼ cup fresh dill, plus more for serving
  • ¼ cup fresh cilantro, plus more for serving
  • ¼ cup fresh oregano
  • 1 clove garlic, minced
  • Zest and juice of 1 lemon
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 8 bone-in, skin-on chicken thighs
  • 1 avocado, sliced into ½-inch pieces
  • 1 red onion, sliced into ¼-inch rings
  • 1 teaspoon capers
Directions
  1. Preheat oven to 400 F.
  2. In a small bowl, mix together yogurt, parsley, chives, dill, cilantro, oregano, garlic, lemon zest and juice, olive oil, salt, and pepper.
  3. Transfer mixture to a blender and blend until smooth.
  4. Place chicken thighs in a baking dish and coat all over with ¾ of the green goddess mixture. Reserve the rest of the sauce for later.
  5. Let chicken marinate for 30 minutes to 1 hour at room temperature.
  6. Bake for 40 minutes, until the chicken is cooked through and the internal temperature registers 165 F.
  7. Top chicken thighs with the remaining green goddess sauce.
  8. Garnish with avocado, red onion, capers, and additional herbs and serve right away.
